Save A delightful bite-sized treat featuring creamy apple-flavored truffle centers coated in buttery caramel and crisp chocolate, perfect for parties or gifting.
I made these caramel apple truffle pops for my niece's fall birthday party, and they vanished faster than I could set them on the dessert table.
Ingredients
- White chocolate chips: 1 cup (220g)
- Heavy cream: 3 tbsp (45ml) for truffle filling + 2 tbsp (30ml) for caramel coating
- Apple sauce: 1/2 cup (120g), unsweetened
- Ground cinnamon: 1/2 tsp
- Ground nutmeg: 1/4 tsp
- Dried apples: 1/2 cup (60g), finely chopped
- Vanilla extract: 1/2 tsp
- Salt: Pinch
- Soft caramel candies: 10 oz (280g), unwrapped
- Dark or milk chocolate: 8 oz (225g), chopped or chips
- Coconut oil or vegetable shortening: 1 tbsp (14g), optional for smooth coating
- Lollipop sticks: 24
- Chopped roasted pecans or sprinkles: 1/4 cup (30g), optional for garnish
Instructions
- Make the Truffle Filling:
- In a heatproof bowl, combine white chocolate chips and 3 tbsp heavy cream. Microwave in 20-second bursts, stirring between each, until melted and smooth. Stir in apple sauce, cinnamon, nutmeg, dried apples, vanilla extract, and salt until well combined. Refrigerate mixture for 1 hour until firm enough to scoop.
- Shape the Pops:
- Line a baking sheet with parchment. Scoop 1-tablespoon portions of the chilled truffle mixture and roll into balls. Insert a lollipop stick into each ball. Freeze for 20 minutes until firm.
- Coat with Caramel:
- Melt caramel candies and 2 tbsp heavy cream in a small saucepan over low heat, stirring until smooth. Dip each truffle pop into the caramel, swirling to coat. Let excess drip off. Place back on the parchment and refrigerate 15 minutes to set.
- Dip in Chocolate:
- Melt chocolate and coconut oil (if using) in a microwave-safe bowl in 20-second intervals until smooth. Dip each caramel-coated pop into the chocolate, letting excess drip off. Immediately sprinkle with pecans or sprinkles, if desired. Place on parchment and chill until set.
- Serve:
- Store pops in an airtight container in the refrigerator until ready to serve.
Save My family loves assembling and decorating these together, always adding their own sprinkle of creativity to each pop.
